Yummy at your fingertips!  Great on crackers or spread on warm beer bread.






  • 2 dozen baby red potatoes
  • 1 package Loaded Baked Potato Dip Mix
  • 1 cup shredded cheese
  • 2 green onions, chopped
  • 2 Tablespoons olive oil
  • 1 teaspoon kosher salt


Wash potatoes and put onto a cookie sheet. Drizzle 2 Tablespoons of olive oil over potatoes and sprinkle 1 tsp kosher salt over the top. Shake pan to coat all potatoes.  Bake in a 350 degree until fork tender (25-30 minutes).  Remove from oven and allow to cool.  Cut in half and scoop out center with a melon baller.  Make dip mix according to package directions.  Mash scooped out "potato ball" with a fork and add to dip. Spoon a portion of dip into each potato half.  Sprinkle a little cheese and onion onto each potato and serve.
